I really don't think that it is supposed to go up that fast (might be hacked or something). Putting 252 EVs into a stat only raises that stat by 63 points so it seems really strange to me that the stat would go up by almost half. When you EV train, it normally just gradually goes up (the most I've had it go up by is like 6).
As long as you're doing your EV training correctly, you'll end up with the exact same stats at level 100. It doesn't really matter if you get a super high number after going up a certain level, since the extra stats get spread out as your Pokemon levels.

I suppose if you leveled with Rare Candy until the Pokemon was like level 99 and then did all the EV training and leveled to 100 you'd see huge gains, but all in all, it doesn't matter if you see huge numbers all at once or not.
(Hopefully I didn't make that hard to understand. x_x Hectic morning.)

The highest gain I've ever gotten while EV training was a +12 in Speed, and I was so surprised by that I actually took a picture of it with my phone. x3
That can happen, but if you didn't raise your pokemon from scratch(i.e. didn't start EV training it until after its been leveled up some levels) it won't go up as much. Then you need to lower the bad stats with special berries. I don't know all of their names off the top of my head but I know that the summary of the berry should say something like "makes the pokemon more friendly but lowers base HP stat" You want to use those for stats you're not EV-ing. Then you can get stuff like the Power Lens, Power Anklet(and other things with power in the title) which make the holder more slow but double the EV's you get in battle. Also the Macho Brace is good to have b.c it raises ALL types of EV's not just like Speed like the Power Anklet does. If you know what I mean. You can only get like 255 EV's on each stat. So doing this just makes the EV's go by faster. Pretty much it means that after 2 or 3 levels you'll be all done EV-ing whereas if you didn't use that stuff that doubles EV's it would take you longer. You always get the same amount of EV's no matter what tho. So it really just depends on if you want to look impressive and brag about how many points your pokemon went up in one stat and superpower them quickly OR just do it over time and still get the same amount of power that you would in the long run. Just at the moment it won't look that impressive.

I somehow feel like I've repeated myself a million times and that I haven't made a lot of sense..... hopefully you understand me!
also I forgot
there's vitamins you can give them to help raise their EV's too.
Like a Carbos will boost Speed EV's.
A Protein will boost attack EV's and so on.
With you it's happening the same thing that used to happen with me.
You're probably EV training a Pokémon that battled other Pokés "before" you start EV training it. So! If the battled Pokés "before" EV training actually gave your Pokémon EV's. For example: when you battle a Zubal you gain at least 1 EV in Speed.
If you add all the Pokés that you killed beforehand you'll notice that your Pokémon has earned a lot of EV's and the EV training that you're doing now will not be effective since the available EV's are a few.
Advice: start EV training an UT (untouched) Pokémon and if you do things correctly IT WILL WORK.
This happens regulaly to me, I got a +21 speed once but, it all evens out by level 100.

the highest i've got was +45 but that was on my mewtwo. you see, i obtain mewtwo at level 70. since killing a bunch of gastly only help me gain very little experience by the time i level up i will eventually grow a lot.
this is because my mewtwo is UNTRAINED

in your case, i can only assume the pokemon you are training probably gain all its ev'd. most starter pokemon are train throughout the game battling different pokemon from different gym leader and the elite four. once your pokemon battle, slowly it gains ev from all different stat. by the end you pokemon reach its full ev without you knowing. when you try to ev train it, its already too late. thats where reduce ev come into play.

also another case can be your pokemon is at a low level. when battling a pokemon, the pokemon will gain a lot of experience therefore it will only grow by 3,4, or sometime 5s top.
