Ice Fang/Waterfall
Earthquake
Taunt/Bite/Stone Edge
Depending on your team and movesets, of course.
Adamant Nature
Leftovers or Life Orb

Adamant nature and Leftovers. Thats whats considered to be a Bulky Gyarados. Alternatively you can go with:

~ Ice Fang / Stone Edge
~ Waterfall
72 HP / 252 Atk / 184 Spe
Adamant @Leftovers/Life Orb

Im an expert with gyarados's the best moveset for him is
Nature= adamant
EV train in speed 255 EV's and attack 255 EV's
Dragon Dance
Waterfall
Ice Fang
Earthquake
that should help you a lot in your adventure
My gyarados is similar to Ichigo's
Adamant with Wave Incense
Aqua Tail
Waterfall
Ice Fang
Earthquake
Although I'm thinking of substituting Aqua Tail for Dragon Dance. (if i do, Wave Incense will be gone for something else as well)
